Good news! I found my camera charger so now I am back in business. Hope you didn’t miss me too terribly much! My eating has not been very good ever since Easter weekend. There are a few reasons for this but really it’s been lack of self control. I got pretty disappointed with myself last night and had an intervention while lying in bed. I know what I need to do and I know I can do it. I just need to take a step back, think and re-examine what I am putting in my body. Time for an attitude adjustment. Not only do I need to clean up my eating, I also need to clean up this messy apartment. I think these things go hand in hand. Overall, I just need to clean up my act and get with the program. I hope that monitoring myself through this blog can help.
Anyways, moving on, let’s start back by looking at eats from yesterday. I started with a bowl of mocha oatmeal:
I had a tiny bit of coffee left in the fridge from my iced coffee pitcher so I used it for my oats! The mix included:
- 1/3 cup oats
- 1/3 cup brewed coffee
- 1/3 cup soy milk
- flax
- shredded coconut
- chocolate coconut spread
- a few almonds
I then went for a run. I did a 10k at race pace. I came pretty close to my PR.
When I got back I snacked on a trail mix I threw together.
Yesterday was also my boo’s birthday so I made him a nice smoothie for breakfast before we headed out to a friend’s for a bbq. Boy loves his smoothies, as long as they don’t have anything green in them
The bbq was nice and very chill. We both got a lot of vitamin D from the shining sun. On the way back home we stopped for some yum gelato.
For dinner we had boy’s favorite dish, chicken marsala. I used a different approach to the dish this time cooking it in the slow cooker for close to 10 hours.
Served with some green beans and sweet peppers.
The marsala was ok but not as good as I had hoped for. I typically experiment with this dish because we make it so often and I am always looking for the perfect technique. The crock pot was not a successful. Now we know! I finished dinner with some after dinner mints from TJ’s
I wish this was all that there was after dinner but it wasn’t. Boy pulled out my marshmallow fluff and things got ugly. That’s what caused my intervention. Sometimes these things happen. Before heading to bed I made a bowl of CHOCOLATE overnight oats. This mix included:
- Oikos caramel yogurt cup
- 1/3 cup soy milk
- 1/3 cup old fashioned oats
- a tbsp dark cocoa powder
- some shredded coconut
- a tbsp of chia seeds
- some almond slivers
I let it sit overnight and woke up to deliciousness!
Holy yum this was the best bowl of overnight oats I’ve ever eaten. It tasted like a chocolate coconut cheesecake. Yummmm! Since I had a cold breakfast I made some hot pumpkin spice coffee to warm me up.
Bodium press I got at Target for $8. Score.
I guess I should confess that I am not much of a coffee purist. I can’t drink coffee without sugar and milk to dilute the brew. It’s way too strong for me. For some reason iced coffee is much easier for me to drink which is why you don’t see a lot of hot coffee on my blog. Here’s what typically goes in my mix
A packet of purevia stevia sweetner and lots of soy milk
Breakfast is served!
I’ve spent most of the morning cleaning up the place which was actually quite a good workout. I started to get really hungry so I made an early lunch. Veggie burger wrap was on the menu.
Mystery veggie burger, shredded pepperjack cheese, bean dip, salsa and sweet peppers.
Leftover veggies and a few popchips made a complete meal.
While on the porch I admired my growing seedlings
I’m so proud of my sprout babies! They are getting so big.
Now to knock off some more things on my to do list. Strength training is on the top of the list followed by grocery shopping to get some fruit. I can’t stand not having fruit in the house!

Chocolate overnight oats sounds ah-mazing!! So much beautiful tasty food!
I think a lot of us have trouble getting back into healthy habits after a holiday weekend. It took me years to be able to eat normally after an indulgent meal. I had the thought in mind that I needed to restrict and then it would blow up in my face a few days later. It’s all about balance. Nowadays I try to eat normally as much as possible after indulgences.. and ya know a green smoothie every now and then helps too
